A yummy recipe from the National Ability Center's rafting program. In July, we'll interview the NAC's rafting program manager.
INGREDIENTS
1 cup brown sugar
1 tsp vanilla extract
1 tsp cinnamon
1/4 cup of butter
5 green apples
1 roll of canned cinnamon rolls
DIRECTIONS
Dutch Oven:
Prep coals for dutch oven. (If using the oven instead of coals follow directions on cinnamon roll packet.)
Open cinnamon rolls and lay out evenly in the dutch oven.
Place over evenly laid out coals and place 10-12 coals on top.
Let bake for at least 20 minutes.
Check after 20 minutes by gently lifting the lid (it will be very hot, use a dutch oven lid lifter).
When the rolls are ready they will be fluffy and light brown on top.
Stove:
Cut green apples into quarter sized chunks. Put apples and butter into a frying pan on low to medium heat and stir frequently.
When the butter melts, add the vanilla, cinnamon and brown sugar.
Test after 10 minutes. The apples should be slightly soft.
Serving:
Serve a scoopful of apples and cinnamon roll together for a great campfire dessert! Serves 8-10 people, or 3-4 raft guides.
